By Rich Landau and Kate Jacoby (The Experiment, 240 pp.)
Subtitled "100 Plates Large and Small that Redefine Vegetable Cooking," restaurant owners and chefs Rich Landau and Kate Jacoby have set out to redefine cooking with vegetables. Their Philadelphia restaurant of the same name earned them "Restaurant of the Year" in 2012 and contains some of their showcase dishes.
Not a fan of vegetables? You might change your mind after trying recipes for dishes such as "roasted cauliflower with black vinegar and kimchi cream" or "grilled broccolini, cured olive, and preserved lemon." Another bonus for busy weekday meals: Most dishes will be ready to eat in 30 minutes or less.
