4 cups dices seedless watermelon
2 tablespoons fresh lemon juice 
2 tablespoons fresh lime juice
1 tablespoon chopped fresh mint 
1 tablespoon honey 
1/2 teaspoon ground ginger (optional) 
Blend ingredients in a food processor until smooth. Chill and serve cold with mint leaves for garnish.
