A head, and heart, for the lowly potato

David Tay loves potatoes. And lives them, too. At Peru鈥檚 International Potato Center, he鈥檚 trying to save 4,600 varieties native to the Andes 鈥� just as potatoes get a closer look all over the world. Chaucha amarilla, anyone?
