The skinny on fat

Many ice-cream fans have long scorned low-fat ice creams, preferring "sinfully" delicious batches to the bland, "nutritious" variety. To them, "fat-free" also meant "flavor-free." Now, this conventional wisdom may be challenged. A new study shows that low-fat chocolate ice creams score as high on taste tests as the higher-fat varieties.

In the survey, conducted by the University of Missouri, 100 people taste-tested chocolate, strawberry, and vanilla ice creams with varying degrees of milk fat.

The results show that participants could detect differences in nonfat, low-fat, reduced-fat, and standard vanilla and strawberry ice cream. But they liked all varieties of chocolate.
